Inclusion criteria

Inclusion criteria: Normal body mass index 18.5 to 22.9 kilogram per square meter Able to read understand and communicate in Thai

Exclusion criteria

Exclusion criteria: A history of food allergies, particularly to nuts, coconut milk, or konjac, presence of chronic diseases, including but not limited to diabetes mellitus, cardiovascular disease, hypertension, or dyslipidemia, pregnancy or lactation at the time of the study, use of medications, dietary supplements, or herbal products known to affect blood glucose regulation, regular smoking or alcohol consumption, current participation in other clinical studies that may influence glycemic responses.
