Inclusion criteria
Inclusion criteria: Diagnosis of obesity and indication for bariatric and metabolic surgery; eutrophic participants with indication for cholecystectomy; age between 18 and 50 years; both sexes; body mass index greater than 40 kg/m² or greater than or equal to 35 kg/m² with comorbidities; body mass index between 18.5 and 24.9 kg/m² for the eutrophic control group.
Exclusion criteria
Exclusion criteria: Psychiatric disease; chronic alcoholism; history of kidney and heart disease; decompensated clinical illnesses; use of vitamin supplementation; diagnosis of obesity due to genetic diseases; individuals with walking disorders.

| Evaluate the inflammatory index of the diet, using the method of calculation of the inflammatory index of the diet, with a positive score for a pro-inflammatory diet and a negative score for an anti-inflammatory diet in the measurements before and after surgical intervention, it is expected to find tissue changes visceral adipose tissue, using the histopathology method, observing the presence/absence of pro-inflammatory cells in the tissue before and after surgical intervention and evaluating metabolic and inflammatory changes through the laboratory method of analysis by enzyme-linked immunosorbent assay (ELISA) and method enzymatic colorimetric comparison, based on the finding of a variation of at least 5% in pre- and post-intervention measurements. | — |
