Inclusion criteria

Inclusion criteria: Apparently healthy adolescents (12–18 years) with no history of diagnosed metabolic or chronic diseases, living in the Birim Central Municipality, Eastern Region, Ghana. Fasting blood glucose <7.0 mmol/L. Adolescents should show willingness to participate.

Exclusion criteria

Exclusion criteria: Adolescents who have been diagnosed with diabetes mellitus or have a history of an endocrine disorder. Adolescents with food allergies or intolerances to rice or tigernuts. Adolescents described as “obese” or "underweight," or with an acute illness, or on medication that affects glucose control at the time of the study.

Postprandial blood glucose response (incremental area under the curve, iAUC) following consumption of tigernut-fortified rice porridge compared with control rice porridge.
