Inclusion criteria
Inclusion criteria: Good general health. Normal smell and taste functions. Healthy weight (BMI 18.5-25 kg/m2). Willing to eat food products used in this study: water, sparkling water, tea, bouillon soup, custard, skimmed yogurt, skyr, custard, mashed potatoes, cheese, chicken, beef, peanuts, carrots, chocolate, noodles, and tofu. No facial hair or willing to shave. Fit in one of the following groups: -Men and women born in China, Chinese nationality, Asian ethnicity, aged 18 * 30 years, living outside China for less than one year. -Men and women born in The Netherlands, Dutch nationality, Caucasian ethnicity, aged 18 * 30 years. -Men and women born in The Netherlands, Dutch nationality, Caucasian ethnicity, aged 65 * 85 years. -Men and women, from any nationality and with any ethnicity, aged 18 * 85 years, and report mild mastication and/or swallowing problems by scoring * 3 in the questionnaire *Eating Assessment Tool 10* (EAT-10).
Exclusion criteria
Exclusion criteria: Medical drug use affecting saliva production, mastication and/or swallowing ability. Mastication and/or swallowing problems caused by neurological problems, i.e. stroke, Parkinson, Alzheimer, Huntington. Missing teeth for the young consumers and a maximum of 2 missing teeth for the elderly (except for wisdom teeth). Wearing dental braces or oral piercing (except removable piercings). Food allergy for one of the food products consumed in the study. Reported vegetarian. Have followed an energy restricted diet during the last 2 months. Employee of the Division of Human Nutrition or Physics and Physical Chemistry of Foods (Wageningen University). Participate in another medical study. Thesis student or intern at the chair group of Sensory Science and Eating Behaviour or Physics and Physical Chemistry of Foods (Wageningen University).
