Inclusion criteria

Inclusion criteria: Adults aged 19–50 years, including men and menstruating women -Adults with all four biological grandparents of East Asian descent (Korean, Japanese, Chinese, Hong Kong, Taiwanese, Mongolian) - Healthy adults with a body mass index (BMI) = 18.5 and < 25.0

Exclusion criteria

Exclusion criteria: - At least one biological grandparent not of East Asian descent - Diseases affecting iron metabolism (e.g., gastrointestinal diseases, diabetes, fractures, severe immune system diseases) or taking medications - Unwilling to stop iron supplements for about four weeks, starting two weeks before the experiment - Body mass index (BMI) outside the range of 18.5-25.0 - Smokers - Unwilling to abstain from alcohol two weeks prior to the study - Adults with very high physical activity levels (e.g., athletes) - Pregnant or breastfeeding - Severe food allergies or numerous food aversions - Planning to move out of Gwangju or Jeollado province within three years or likely to have follow-up difficulties - Experienced significant blood loss (e.g., from donation or surgery) in the past year, received blood transfusions, or plan to donate blood or receive transfusions in the next 2.5 year
