Each subject consumes the following three meals at three different breakfasts: Meal 1: 150 g white rice with 200 mL lemon water (12 g lemon juice solution) Meal 2: 150 g white rice with 200 mL water

Inclusion criteria: Students and faculty of the University of Niigata Prefecture

Exclusion criteria

Exclusion criteria: Diabetes, medications that affect blood glucose levels, pregnancy and bleeding disorders
