It is unclear, whether macroalgae can contribute to the supply of micronutrients, especially carotenoids, by daily consumption. Being Novel Foods, they are not sufficiently characterized. Our study will show, whether daily consumption of one portion of commercially available macroalgae snack for one month can significantly improve plasma carotenoid status.

Inclusion criteria
Inclusion criteria: - heathy men and women - 18-65 Years - BMI 18,5 to < 30 kg/m2 - written informed consent
Exclusion criteria
Exclusion criteria: Active smokers Pregnancy, breastfeeding Unintentional weight loss (10% in the last 6 months) Obesity (BMI = 30 kg/m²) Underweight (BMI < 18.5 kg/m²) Language difficulties or concentration problems Pacemakers, defibrillators, and event recorders Chronic or severe conditions such as gastrointestinal problems, liver, kidney, or pancreatic diseases, inflammatory diseases, or tumors Metabolic or blood disorders such as diabetes, elevated blood lipid levels, blood clotting disorders, or thyroid dysfunction Diagnosed eating disorder/disorder of eating behavior Food intolerances/allergies to fish, seafood, algae, gluten, soy, eggs, milk, nuts, seeds, histamine, crustaceans, sesame, lupine, and tomatoes Thyroid diseases Heart attack or stroke Known arterial hypertension Previous bariatric surgery Regular medication use (except hormonal contraception) Participation in other clinical trials Regular intake of dietary supplements (multivitamins, carotenoids, trace elements), if participants are not willing to refrain from them during the study
