Inclusion criteria

Inclusion criteria: Healthy female and male subjects, aged 18 to 30 years; Caucasian, BMI <30 kg/m2; nonsmokers; written informed consent

Exclusion criteria

Exclusion criteria: Current participation in intervention study; active smokers; alcohol abuse; vitamin B12 deficiency/increased homocysteine level/hemoglobin deficiency; chronic diseases; pregnant and lactating women; blood donation in the last 3 months, known allergies or intolerances to any of the tested foods (dairy products)

Course of plasma folate levels on the three study days after the respective intervention

Folate uptake capacity with inferences on folate bioavailability, differences between subjects and genders, influence of methylenetetrahydrofolate reductase (MTHFR) genotype.
