Group 1: Food without Folate (rice cracker with cheese or honey)
consumption whenever necessary on one of three study days
14-days break after the invention Group 2: labelled yeast (1x 400 µg 15N-labelled Folate)
consumption in the morning of one of three study days
14-days break after the invention Group 3: [13C]-5-methyltetrahydrofolate (1 x 400 µg)
14-days break after the invention

Inclusion criteria

Inclusion criteria: healthy female and male volunteers, between 18 and 30 years old, Caucasians, BMI lower 30kg/m2, non-smoker, informed consent

Exclusion criteria

Exclusion criteria: current participation in an intervention study; smoker; Alcohol addiction; lack of Vitamin B12/ hemoglobin and high level of homocysteine; chronic diseases; known allergy or intolerance against tested food; pregnant and lactating women; blood donation in the last 3 months; regular medication; During the study: acute illness; intake of antibiotics, Breach of the study conditions; incalculable occurrences

Determination of the plasma folate level in blood after the consumption of 15N-labelled folate, the folate supplement and the folate free food; generating a plasma folate curve out of 20 measuring points over a period of 24 h on each of the three study days
