Inclusion criteria

Inclusion criteria: Determination of GI values of wheat baked products: 1. Age between 18 and 30 years; 2. Female, not pregnant or breastfeeding; 3. Normal weight, BMI between 18.5 kg/m^2 to 24.0 kg/m^2; 4. No history of diabetes or impaired glucose tolerance, no other endocrine, metabolic, digestive, or mental disorders; 5. No history of food allergies or intolerances to food being tested; 6. No intake of any nutrients that affect glucose tolerance, such as protease inhibitors, contraceptives, aspirin, antidepressants, steroids, and other drugs that may affect glucose tolerance in the past 3 months; 7. Ability to tolerate fasting for at least 10 hours. Exclusion criteria: various other unsuitable conditions. The effect of high resistant starch wheat products on postprandial blood glucose in diabetic patients: 1. Age: 18-70 years; 2. Gender: unrestricted; 3. BMI: 18.5-30 Kg/m^2; 4. Diagnostic criteria for prediabetes (based on the 2022 ADA diagnostic criteria for prediabetes); 5. Impaired fasting glucose (IFG): 5.6 mmol/L <= FPG <= 6.9 mmol/L; 6. Impaired glucose tolerance (IGT): 7.8 mmol/L <= 75 g OGTT <= 11.0 mmol/L or III. Glycated hemoglobin: 5.7%-6.4%; 7. Diagnosed diabetes: diagnosed with type 2 diabetes within the last 15 years, but routine fasting blood glucose should be <= 9.0 mmol/L, glycated hemoglobin <= 8.5%, with no severe diabetes complications; long-term (4 weeks or more) use of one or two fixed doses of hypoglycemic medications or subcutaneous hypoglycemic medications like semaglutide, dulaglutide, etc., and no changes to the hypoglycemic regimen after enrollment; 8. If taking lipid-lowering, antihypertensive, or other medications, they should be fixed medications and dosages for over 4 weeks, with no changes to the treatment plan after enrollment. (Must meet items 1, 2, 3, and item 4 or 5).

Exclusion criteria

Exclusion criteria: Determination of the GI value of wheat baking products: 1. Human immunodeficiency virus-1 infection and malignant tumors; active cardiovascular, kidney, lung, liver, blood, digestive, neurological, or mental diseases; recent (within 4 weeks) acute respiratory symptoms. 2. Any medications considered to potentially interfere with the assessment (e.g., other herbal products, immunosuppressants, anticoagulants), or history of allergy or other adverse reactions to bread products. 3. Pregnant or breastfeeding women. 4. Allergic constitution and a history of multiple drug allergies. 5. Circadian rhythm disorders, such as shift workers. 6. Any disease that, in the judgment of the investigator, could jeopardize the subject's safety or affect adherence to the study protocol. The impact of high resistant starch wheat products on postprandial blood glucose in diabetic patients: 1. Use of insulin within the last 3 months. 2. Human immunodeficiency virus-1 infection and malignant tumors; active cardiovascular, kidney, lung, liver, blood, digestive, neurological, or mental diseases; recent (within 4 weeks) acute respiratory symptoms. 3. Any medications considered to potentially interfere with the assessment (e.g., other herbal products, immunosuppressants, anticoagulants), or history of allergy or other adverse reactions to bread products. 4. Pregnant or breastfeeding women. 5. Allergic constitution and a history of multiple drug allergies. 6. Circadian rhythm disorders, such as shift workers. 7.
