Inclusion criteria
Inclusion criteria: 1. The included people are willing to participate and give informed consent 2. Agree not to take over-the-counter vitamin supplements, multivitamins or separate supplements of vitamin E, folic acid, n-3 fatty acids or carotenoids 3. Normal chewing function, can eat nuts and other hard foods 4. Patients diagnosed with mild cognitive impairment with a baseline MMSE score of 16-25/30
Exclusion criteria
Exclusion criteria: 1. Allergies to more than one food 2. Dysfunction of swallowing or chewing 3. Use medication to treat Alzheimer's or Parkinson's disease 4. Have bipolar disorder, depression, or other mental illness 5. Unstable or recent onset of cardiovascular disease, such as myocardial infarction within the past 6 months or type 1 or more heart failure 6. Recent stroke within the past 3 months 7. Diagnosed with cancer within the last 5 years 8. History of brain injury, liver disease, or HIV 9. Medical conditions associated with weight change (i.e. history of gastrointestinal disorders, inflammatory bowel disease, Crohn's disease, colostomy, enterectomy or gastric bypass surgery, etc.) 10. Alcohol or drug abuse in the past 6 months (> 2 drinks/day for women; Men > 3 cups/day)
