Inclusion criteria
Inclusion criteria: Apparently healthy 20â??39 year old individuals, non-pregnant, non-lactating and willing to participate in the study. Individuals with normal BMI (19-25 kg/m2) and fasting blood glucose between 70-100 mg/dl.
Exclusion criteria
Exclusion criteria: Current illness (fever, GI disturbances, etc.,), Food intolerance/allergies, sleep disorders Taste/odour perception disorders, color blindness, denture defects, Minor infections of nose and throat, Medical history of chronic diseases and comorbidities. Medication that interferes with carbohydrate metabolism.

| It will help to identify feasibility of food to food fortification of common cereal with millets. The study will generate database on calcium, iron and zinc and its bioavailability in the blended flour Information on inhibitors such as phytic acid, dietary fibre will be generated. The study will generate the acceptability of the traditional foods prepared using blended flours. To determine glycemic index and glycemic load of the blended flours based foods developed.Timepoint: Four products will be developed from the blended flour. Fasting blood glucose will be monitored at 15 mins and immediately before glucose consumption ( -15 and 0 min). 50g glucose solution will be provided to the participants and blood will be drawn at 15,30,45,60,90 and 120 mins after the first sip of the drink, the same procedure will be followed with test food. Each of the reference food, the test food will be consumed on 3 random days with a wash out period of 2 days between the foods | — |
