Brief summary
We hypothesise that actinidin in KiwiBerry will reduce the activity of an enzyme in saliva, a-amylase, resulting in lower blood glucose levels after eating. The proposed study will be a three-arm, randomised, crossover, clinical intervention study. Participants will attend three study days, with a minimum of 72 hours between each visit. At each visit they will consume one of the following three interventions: 1 - starch (2 slices of commercially available bread) + equivalent fruit sugars, 2 - starch (2 slices of commercially available bread) + 10 g Tahi KiwiBerry pulp 3 - starch (2 slices of commercially available bread) + 10 g red kiwifruit pulp. By the end, participants will have received all three interventions. The primary outcome measure will be blood glucose concentration after eating. The secondary outcome measure will be plasma insulin concentration after eating.
Interventions
This is a three-arm, randomised, crossover study which includes three study days, separated by a washout period of at least 72 hours.. At each visit, participants will consume one of the following: Arm 1 (comparator) - starch (2 slices of commercially available bread) + equivalent fruit sugars Arm 2 (intervention) - starch (2 slices of commercially available bread) + 10 g Tahi KiwiBerry pulp Arm 3 (intervention) - starch (2 slices of commercially available bread) + 10 g red kiwifruit pulp. By the end of the study, participants would have received all three study interventions. Participants must consume their meal within 10 minutes from the first bite and will be supervised by a member of the research team to monitor adherence.

Inclusion criteria
Healthy adults between ages of 18 - 65 years inclusive
Exclusion criteria
A history of diabetes or show evidence of glucose intolerance (fasting blood glucose 5.7 mmol/L or higher, HbA1c level 41 mmol/mol or higher). Allergy to, or intolerance of, KiwiBerry, kiwifruit or wheat products. Pregnant, planning to get pregnant in the near future or are breast feeding. None of the following: (i) blood borne diseases (e.g. hepatitis), (ii) are taking medication that affects the properties of blood (e.g. blood clotting), (iii) have a chronic illness (e.g. cancer).
